Anerobic Techniques
Technically, Karana pioneers terroir-specific fermentation using unique starter cultures to bring out Bali’s distinct flavor profiles. Their anaerobic washed honey method begins with selective hand-picking and sorting of ripe cherries. After inoculation, cherries ferment under controlled anaerobic conditions until reaching a target pH. Beans are then pulped, holding mucilage for 12 hours to develop sweetness before washing it off using demucilager or gentle brushing. Drying on raised beds enables even airflow and a drying period of 2–3 weeks. Final steps include hulling and precision sorting during dry milling to ensure consistent bean quality.
