Farm Details:
Founded by Edson Luiz Ignacio after an extensive search for the perfect location, the 1,000-hectare farm dedicates half its land to native vegetation and water conservation. Sustainable practices include organic composting, biological pest control, and a strong focus on community training and well-being.
Located at 1,250 meters in the Serra da Canastra region of Cerrado Mineiro, Canastra Farm benefits from ideal coffee-growing conditions—high altitude, fertile soil, and a climate with hot, humid summers and mild, dry winters. These factors, along with significant day-night temperature variation, slow the ripening of coffee cherries, enhancing sugar concentration and flavor.
Canastra Farm produces about 40,000 bags of coffee annually, growing varieties such as Arara, Catucaí, Bourbon, Acauã, Paraíso, Guará, and IPR 107. It uses natural, semi-washed, and fermented processing methods to highlight each variety’s unique profile.
