La Providencia is a 70ha farm owned by Fernando Alfaro & Jose Enrique Guiterrez both of whom have a long family history with coffee production in

El Salvador they are meticulous in sorting and depulping the fully ripe coffee cherries - then they dry the parchment on raised african 
drying beds - with a labor intensive 22-24 days of constantly turning the beans until completely and perfectly  dry to stop clumping during the Black Honey Process
